7 Layer Dip Appetizer Recipe

One of my favorite appetizers of all time is a 7 layer dip. I don’t think I ever tried it until I was in college, and I fell in love. Hard. The only big problem I have with it (generally speaking), is that it often has salsa or some form of onions inside of it, so if that’s the case, I just can’t do it. In case you didn’t know, I have a strong aversion to onions. I know, I know, how can I even enjoy food, right? I hear it all the time. I survive just fine, thank you. I’ll add onion salt or powder if I really feel it needs a boost, but otherwise, I fill my recipes with other flavors. Today, I share this unique 7 layer dip recipe, with my own little twist on it.

A unique ingredient I used is the layer of corn. I also love to mix Old El Paso seasoning with the Old El Paso refried beans layer, to give it an extra kick. Layered Bean Dip appetizer Recipe

I can’t have anything Mexican without a side of limes. Limes are my fave. I could bath in lime juice. For this recipe, they get squeezed in to the non-onion-ified guacamole layer.

Just take a serving spoon, and scoop all the way to the bottom of the trifle dish, to grab each layer. You can also put them into a 9×13 casserole dish as an alternative serving option.

Ingredients
  • 16 oz. sour cream
  • 2 25 oz. cans Old El Paso refried beans
  • 2 cups grated cheddar cheese
  • 1/4 cup or 1 packet Old El Paso taco seasoning
  • 2 cans corn
  • 2 cups smashed avocado
  • 2 to matoes
  • 1 can sliced olives
  • 2 fresh limes
Instructions
  1. Mix refried beans with taco seasoning, layer on the bottom.
  2. Spread sour cream for 2nd layer.
  3. Spread canned corn about 3rd layer.
  4. Mix smashed avocados with fresh lime juice for 4th layer.
  5. Spread shredded cheese for 5th layer.
  6. Sprinkle olives for 6th.
  7. Spread sliced tomatoes for 7th layer
  8. Optional: garnish with cilantro, and olives/tomatoes can be decorated however, doesn't have to be a layer (see picture)
