Spaghetti Squash Carbonara with Bacon and Shrimp Recipe

Bacon Shrimp Spaghetti Squash Carbonara is a meal you have to try.  I’ve fallen in love with the spaghetti squash. A year ago, I never even brought one into my home, now I cook with it probably 2 times a month. I’ve got a new favorite dinner recipe to share, and I’m so excited I can’t contain myself. I call it, Bacon Shrimp Spaghetti Squash Carbonara, and it’s so flavorful, I’m craving it like crazy right now (I just finished the leftovers, and I’m sad it’s gone). A while ago, I shared Spaghetti Squash Marinara Boats, I really do love the spaghetti squash!

This may sound weird to some people out there, but I’ve been going through a drought of making delicious food at home, as my husband and I aim to go more grain free in our lives. I’ve written a post about this a hundred times in my head, but then just haven’t actually tapped it out. Since we are making those changes, so are our kids, for the most part, at least for dinner. I mean, I’m not cooking two meals, but sometimes I modify for them.

We had a spaghetti squash sitting around, and we’d tried the carbonara before, my husband makes a great white sauce. I just started cooking bacon, opened the freezer and saw the shrimp hanging out there, and then threw in some frozen peas while the squash cooked in the oven.

Once the squash was cooked, I pulled out the insides, mixed the sauce, and the rest, then sprinkled with parmesan cheese and baked it a few more minutes.

Ingredients
  • 1/2 lb bacon cut in pieces
  • 1 lb shrimp
  • 1 cup froze peas
  • 1 spaghetti squash cooked
  • 6 T butter
  • 1/2 cup heavy cream
  • 1 t garlic powder
  • 1 t onion salt
  • 2 eggs
  • 1/4 cup Parmesan cheese
Instructions
  1. Cook bacon in skillet, then throw in shrimp to warm, then throw in peas for just 1-2 minutes to warm. Remove from heat.
  2. Make white sauce with butter, cream powder, salt, and add eggs at the very end briefly cooking.
  3. Remove spaghetti squash flesh, mix with sauce, bacon, shrimp, peas.
  4. Mix squash, sauce, and remaining in dish, sprinkle with parmesan cheese.
  5. Broil 3-5 minutes.

For a long time, I was cooking the spaghetti squash just to do the standard marinara. I shared the spaghetti squash boats.   Then I went searching for more recipes and shared 12 delicious spaghetti squash recipes to try.  I’ll be honest and say that my kids haven’t quite caught the joy of the spaghetti squash yet, but I’m not giving up. I’ll just boil some noodles to go with theirs when I make it.
