I’m delighted to share a fun tradition we have for our Halloween dinner each year, but it also is fun for anytime in the Fall, it’s our recipe for Dinner in a Pumpkin!

Dinner in a pumpkin is something that we have been making in our family every Halloween since 2004.  That is a LONG time!  The ingredients for dinner in a pumpkin are easy.  It is a sausage and rice base, but the fun comes when you put all of the ingredients inside of the pumpkin that then put that pumpkin right in the oven. The kids never stop enjoying dishing their dinner right out of a big orange pumpkin???

How to Make Dinner in a Pumpkin

If you do not have leftover cooked rice, you will want to start by cooking two cups of rice.  While that is cooking, you can have your kids clean out the pumpkin.

Once your pumpkin is empty and the rice is cooked, brown the sausage in a skillet.  Then mix the remaining ingredients together and put the mixture into your pumpkin.

Place the pumpkin on a cookie sheet and into the over for an hour.  Then serve!

Dinner in a Pumpkin is the perfect Halloween meal.  An easy, fun Fall family recipe that is as fun to make as it is delicious to eat!

Ingredients
  • 1 medium pumpkin
  • 1 lb. ground sausage
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 can cream of chicken soup
  • 1.5 to 2 cu. cooked rice
  • 1 8 oz can sliced water chestnuts
  • 1 cup slivered almonds
Instructions
  1. Clean out pumpkin and decorate outside with black marker (optional).
  2. Brown sausage.
  3. Mix in remaining ingredients.
  4. Put pumpkin on cookie sheet.
  5. Fill pumpkin with mixture.
  6. Place in oven and bake pumpkin with lid on for 1 hour at 350F or until pumpkin is tender.
  7. Ladle on to plates out of the pumpkin.
