Easy Caprese Salad

Some may say that this is a summer salad, but I pledge right here and now to eat this Easy Caprese Salad all. year. long. It has become my new obsession/favorite salad to eat. I don’t think I’d ever heard of it 6 months ago, and I can’t seem to pinpoint exactly where this delectable treat entered my radar, but my sister in law Alayna helped me throw this together in June, and I nearly gobbled up the entire bowl. It really only has 3 main ingredients with 2 oils to mix as the dressing. Seriously, easy.


3 main ingredients: baby tomatoes, mozzerella, basil mixed with 2 liquids as dressing: olive oil & balsamic vinegarette


Easy Caprese Salad Recipe:
-2 packages of cherubs mini tomoatoes (10 oz. container) I cut them in half, but you don’t have to.
-1 package mozzerella roll (I could have used the mozz. balls soaking, but I wanted it as fresh as possible and I figured there was more salt in those) cut to same size as tomato
-head of basil chopped up

dressing:
1 T olive oil
1 T balsamic vinegarette
toss to taste

Easy!

    I love caprese salad. My favorite sandwich restaurant in AZ serves it with cavatappi noodles (like curly macaroni) and it is fabulous! It is a great way to get your kids to try it if they don’t already like it!

    Try adding corn to it , I live close to a Trader Joes and their roasted corn from the freezer section is yum in this type of salad as well. The panni version is my favorite – using pesto and sundried tomatoes with slices of buffalo mozzarella .

    This salad has been on my radar for a while and I have to agree that it is delicious. It’s so simple but packs a big punch. And when you can get garden fresh ingredients, it’s over the top!
