Grilled Salmon with Mango Salsa

My number one, secret tip for this grilled salmon with mango salsa recipe is to buy frozen mangos.  The mango comes in pretty big chuncks, so chopped them into bite size pieces.  Then I simply mixed them with the avocado, some lime juice and citrus salsa.  And it was perfection!  For the salmon, I have a grill pan that I used in my kitchen that makes it so easy–cook 3 minutes on each side. Fast and healthy!   Every time I make salmon for dinner, I am reminded how quick and easy and healthy it is.  And every time I ask myself, “why the heck don’t I make salmon more often?”

I don’t think I ever even had salmon until I was way into adulthood. We never had fish at home growing up, and if I had tried it, I completely turned my nose up at it. But I think I had the more fishy fish, not salmon. Salmon is EASY and a great non-fishy fish. It’s great for brain development in kids, and really just some of the best food to eat. Eat more salmon!!!

Ingredients
  • 4 fresh salmon fillets
  • 1 cup frozen mango chunks cut to small cubes
  • 1 cup fresh avocado cubed
  • 1/2 cup HEB citrus salsa
  • 2 fresh limes
  • 2 cups brown rice cooked
  • 1 tsp. paprika
  • salt and pepper to taste
Instructions
  1. Spray bottom of grill pan with PAM cooking spray
  2. Season salmon with salt, pepper, and lime juice.
  3. Cook Salmon fillets skin side down for 3-4 minutes, flip to the other side for 3 minutes and then peel the skin off.
  4. Prepare mango salsa with frozen mangos, fresh avocados, 1 lime squeezed, and HEB citrus salsa.
  5. Serve over brown, cooked rice and sprinkle with paprika

I really don’t cook with fish enough, but I do love Salmon. It is SO fast to cook, I love it!   I’m recommitting myself to cooking fish once a week and it may just be salmon every week!
