Those of you who live outside of the great state of Texas have probably never heard of the fabulous grocery chain we have around here, H-E-B. It is known far and wide for freshness, my fave is to grab freshly made tortilla’s hot off the press for dinner in the evening. I I’m joining forces with H-E-B and ConAgra Foods to be a part of their Meal Maker Challenge for Back to School fun! They’ve asked me and 9 other Texas bloggers to create quick and easy recipes for families on the go. In case you are like me and didn’t realize, ConAgra is a part of the likes of Hunt’s Tomato’s, Peter Pan peanut butter, or PAM spray and many more familiar brands).  I’m delighted to be a part of this series. For the next 5 weeks, I’ll share a meal a week, and here is your little sneak peek of the meal recipes I’ll share:

{UPDATED: Recipes linked below}

For the next 5 weeks, I’ll share a dinner recipe with a featured ingredient. All of the other bloggers will also share a recipe with the same ingredient. So you’ll see 10 variations on that one ingredient one week, then we’ll move onto another ingredient the next week. Even more exciting for YOU is that each dish has just 7 ingredients and can be made in under 30 minutes. That was a challenge for me–especially just 7 ingredients (salt, pepper, and water being freebie’s).  Here is what you’ll see coming your way, recipes with these key ingredients:

Week 1, August 4th: H-E-B Salsa Recipe: Grilled Salmon with Mango Salsa

Week 2, August 11th: Egg Beaters Ham and Egg Omelet Cups

Week 3, August 18th: Hunts Diced Tomatos Chicken Tortilla Soup

Week 4, August 25th: H-E-B Natural chicken breasts Chicken Parmesan with Vegetable Pasta

Week 5, September 1st: Peter Pan Peanut Butter  Satay Chicken Skewers with dipping sauce

Do I look like a chef yet?

I’ve already cooked, photographed, and submitted my recipes. The blog posts are written, and they will be published each Sunday morning for you all to drool over, so check back!

If you’d like to help me win this challenge, you have the opportunity to vote for your favorite dish, and the winner gets…well…prizes;)  After I post the recipe each week, I’ll tell you where to go to PIN the image.

Also, those who live in Texas can visit their local H-E-B stores each week for coupons to buy that week’s themed ingredient, and make the same dish I share that week!   Come back Sunday for my first recipe!!
