The Pineapple and coconut slivers make it “Hawaiian” and the crunch from the chow mein noodles and celery are my fave! I don’t like onions, so I just add some onion powder. The recipe below is for a family of 4, I often double it and can usually stretch the meal for a second day. Some people may add tomatoes or olives as a topping, but we don’t.

I originally got this Hawaiian Haystacks Recipe from my husband’s mom, and it’s easy. I remember when she told me the recipe over the phone she said, make a cream sauce with flour and milk and I was like…”Ummmm, I’m going to need more information than that.” I’m not much of an experimental or guess-type of cook, I need step by step instructions.

Making this Hawaiian Haystacks Recipe is a win-win in our home, and it’s great because everyone gets to choose the toppings they want. Similar to another favorite, the Doritos taco salad recipe, we all have different preferences. I just have to make sure I have all the toppings on hand because the toppings are what makes it great.

The “haystack” comes from the foundation of rice that holds up the meal…then the sauce…then the toppings.

The name Haystacks comes from the base of rice, but the pineapple and coconut slivers make it Hawaiian and the soy sauce/chow mein noodles are Asian inspired.

Ingredients
  • White sauce:
  • 3-4 Chicken breasts cooked and shredded
  • 1/4 cup butter
  • 3/4 cup flour
  • 1/2 tsp. salt
  • 3 cup milk
  • 1 can cream of chicken soup or substitute homemade version
  • 1 tsp onion powder
  • Toppings:
  • 1 cup shredded cheddar cheese
  • 1 cup coconut slivers
  • 1 cup almond slivers
  • 1 cup celery chopped
  • 1 cup chow mein noodles
  • 1 cup pineapple chunks fresh or from can
  • 1/2 cup soy sauce
  • Served over:
  • 1 cup cooked rice
Instructions
  1. Start rice. Make white sauce with butter, flour, salt, and milk.
  2. Add soup, onion powder, and cooked chicken.

  3. Chop celery
  4. shred cheese
  5. Serve rice, then sauce, then toppings as you please.
