Grilled Chicken with Feta Cheese Sauce

This feta cheese sauce drizzled over grilled chicken is an easy and delicious way to shake up family dinner!

Grilled Chicken with Feta Cheese Sauce

Sometimes I make dinner too complicated. I used to be all over casseroles and lots of fan fare, now I like the basics. Chicken. Grilled chicken. With a little kick of flavor.  Making this cheese sauce was simple and quick, and had great flavor with the feta cheese.  My kids are kinda weird about sauce of any kind. They don’t “dip.” Not into ranch, ketchup, or even salsa. So I wasn’t sure how they were going to go for this sauce. I served it on the side, in a separate dish, to give options. They all opted to not try it, until I urged them. I mean, I had to give a FULL account here of how it was received.

I REALLY liked it, and my husband who doesn’t generally care for any cheese other than cheddar or swiss, also gave it 2 thumbs up. Hooray! I couldn’t convince my youngest to even eat chicken, so I wasn’t going to even try with the sauce, but the other big kids gave it a head nod. I’ll take it!

It’s nice and thick, I served it with rice, but also great with pasta or nothing at all.

Feta Cheese Chicken

Here is the simple recipe:

Ingredients
  • 4 chicken breasts
  • 1 tsp. any flavor seasoning
  • 4 T. coconut oil
  • 4 tsp. flour
  • 1.5 cups milk or 12 oz. evap milk
  • 1 cup Nikos Traditional Feta Cheese
  • 1/2 cup parmesan cheese
  • 2 T marinara sauce or tomato paste
Instructions
  1. Saute seasoned chicken in 2 T coconut oil, 4 minutes on each side, or until cooked through.
  2. Remove chicken.
  3. Add remaining 2 T coconut oil, 4 tsp. flour, and milk to blend in pan until thickens.
  4. Add feta cheese
  5. Add parmesan cheese
  6. Add marinara sauce for a slight tomato flavor and a touch of color (optional)
