It’s only been in the past few years that our family has figured out that we love a good sweet potato. I mean, I never had them growing up, and I’m just looking to eat the rainbow these days.  Around the holidays, one of my favorites is to make a sweet potato casserole, but it’s SUCH a pain to cook and peel and mash all of those potatoes, right? Have I got a secret for YOU! Today I’m introducing this Shortcut Sweet Potato Casserole Recipe in collaboration with Bob Evans Mashed Sweet Potatoes, and how to make your holiday (and everyday) baking just a bit easier.  I’m delighted to have worked with Bob Evans to create this post, all opinions are my own.

What would you say if I told you that you don’t have to cook/peel/mash all of those sweet potatoes to make a delicious sweet potato casserole dish? What’s that you say…you’d cheer? Well, go for it, Go ahead and cheer.

I’m joining forces with Bob Evans Food today to share that they’ve done the dirty work for you, and all you have to do is pull out the mashed sweet potatos, and simply add the nutty layer to the top for the casserole. All the hard work done for you!

So, the potatos come mashed for you, and they are microwaveable to heat them up…already in a tray to use. I cooked them for 3 minutes in the micro cooker, and then added the brown sugar nut layer to the top. You COULD microwave it again to make that top layer warm, but I decided to transfer it to a baking dish, and cook on broil for about 3 minutes, because I like a crunchy top layer.

I was done in under 10 minutes, and as a side dish, I think this works perfectly for my family of 6.

These containers are found in the froze food section, and can remain in the freezer until you are close to using it. I popped mine in the fridge the night before, so it was already thawed when I cooked it in the microwave.

Once you’ve warmed up the potatoes in the microwave, I mixed together the topping, then spread it on top of the sweet potatoes.

I then transfered the whole dish to an oven safe bowl, and cooked on broil for 3 mintues, for a crusty top layer. You can also microwave it, but I wanted some extra crunch from the broil heat. Here is the full recipe:

Ingredients
  • Mix into mashed sweet potatoes:
  • 1 T vanilla
  • 1 T brown sugar
  • Crumb topping:
  • 1 lb. Bob Evans Mashed Sweet Potatoes
  • 1/3 cu. brown sugar
  • 1 T flour
  • 1/2 cup chopped pecans
  • 1 T butter
  • 1/2 T vanilla
Instructions
  1. Mix the first two ingredients into the warmed mashed sweet potatoes
  2. Then mix all together the crumb topping, and melt it for 1 minute in microwave
  3. Add crumb topping to mashed sweet potatoes
  4. Transfer to oven safe dish
  5. Broil on high for 3 minutes until crumb topping bubbles
