We have just discovered our love of the sweet potato in the past year, and I enjoy looking up new sweet potato recipe to add to our menu. Who knew that something with the word “sweet” in it would be so filled with the good stuff? The bright orange makes my colorful heart happy, and though the flavor takes getting used to, my kids are accepting it more and more, as I serve it.
