Breakfast muffins are a great back to school, plan ahead, keep in the freezer, kind of meal to save your sanity during the morning rush. Last year, for the early morning Bible Study class that I taught, I declared “Muffin Monday” the first day of the week, and I experimented with all kinds of muffins. I’m not sure that I’ll do that every week this year, but I’ve found my favorites, and some of them are below, along with a few others I’d like to try. Scroll down to see the variety!
