Satay Chicken with Peanut Sauce

Ingredients
  • Chicken Marinade:
  • 12 Chicken tenders
  • cup soy sauce
  • 2 limes
  • cup water
  • cup brown sugar
  • 1 tsp. ginger fresh if possible
  • Peanut Sauce:
  • 13.5 can coconut milk
  • 4 T peanut butter
  • 1 lime
  • 1 T brown sugar
Instructions
  1. Marinade chicken for 15 minutes, up to several hours for more flavor
  2. Put marinaded chicken tenders on wood skewers (soaked ahead of time if possible so they don’t get scorched)
  3. Grill chicken 5-7 minutes on each side
  4. Prepare Peanut Sauce by mixing 1 lime, 1 can of coconut milk, and 4 T peanut butter and cook in saucepan.
  5. Let sauce boil, then simmer for 5 minutes.
  6. Serve chicken skewers with peanut sauce to dip.
