Gourdough's Copycat Peanut Butter & Jelly Doughnut

Delicious doughnut recipe made as a copycat of Gourdough's gourmet. Topped with a peanut butter frosting and filled with jelly goodness.

Ingredients
  • 1 T yeast
  • ¼ cup warm water
  • 1 ½ cups milk
  • ½ cup sugar
  • 1 tsp salt
  • 2 eggs room temperature
  • 1/3 cup Crisco
  • 2 ½ cups All Purpose flour
  • 3 cups cake flour

  • 1/2 cup peanut butter
  • 1 cup jelly of your choice
  • 1.5 cup powdered sugar
  • 1/4 cup milk
  • 1 cup peanut butter chips
Instructions
  1. Put milk in a pan and bring to a boil, then immediately remove from heat to cool.
  2. In a small bowl, combine hot water and yeast.
  3. Let sit while rising, about 10 minutes.
  4. Combine the milk, sugar, salt, eggs, Crisco and the 2 ½ cups of All Purpose flour. Mix well, and then add yeast.
  5. After combined, add the additional 3 cups of cake flour.
  6. Mix on high for 3-5 minutes, until the dough is smooth.
  7. Cover the mixing bowl with plastic wrap and let rise at least an hour.
  8. Roll out dough onto a lightly floured surface about ½ inch in thickness.
  9. Cut doughnuts with cutter.
  10. Let them rise another 30 minutes.
  11. In a large heat 1 qt of vegetable oil to 350 degrees.
  12. Fry the doughnuts and doughnut holes just until golden brown, flip.
  13. Grab with tongs and place on paper towels.
  14. Dip in powdered sugar, cinnamon sugar, glaze, or make a topping.

  16. Make peanut butter frosting with peanut butter, powdered sugar, and milk. Mix the 3 until well blended.
  17. Use pastry tips to squeeze jelly into top of doughnut in a few spots
  18. Dip doughnuts into Peanut butter frosting
  19. Sprinkle with peanut butter chips
  20. Drizzle with jelly on top
