Delicious hearty sausage zucchini soup

  • 5 fresh zucchini
  • 1 lb. ground sausage
  • 6 Tbsp olive oil
  • 1/4 tsp garlic powder
  • 8 oz can tomato sauce
  • 16 oz. can diced tomatoes
  • 1 Tbsp butter
  • 1 tsp onion powder
  • 16 oz. shredded colby jack cheese
  1. Cook ground sausage, set aside.

  2. Cut up fresh zucchini into cubes.

  3. Cook zucchini in oil, butter, garlic, onion until soft.

  4. Throw in cooked sausage, tomato sauce, diced tomatoes, and a little water if needed.

  5. Once everything is in the pot, simmer until hot.

  6. Add shredded cheese at the end just before serving.

*I don’t like onions, so I use onion salt, but for the lovers, you can cook them with meat or zucchini. This is for 4-5 people, I double this for a group of 10. Very hearty and filling!
