Creamy Pesto Gnocchi with Sausage {Lucky Gnocchi Legend}

This Gnocchi Pesto dish is sure to delight both young and not so young. Make it for dinner tonight!

  • 1 pound Gnocchi Pecorino Cheese from World Market
  • 1/2 pound mild Italian Sausage ground or links, cubed
  • 2 T extra virgin olive oil
  • 1 medium red/yellow bell pepper diced
  • 1 cup pesto
  • 1/2 cup whole milk or light cream
  • 1/2 cup Parmesan cheese freshly grated
  • 1/2 cup Pine Nuts
  1. In a large pot, cooke the gnocchi 2-3 minutes
  2. Drain Gnocchi
  3. In large skillet, head oil over medium heat and sauté peppers until tender (approx. 4 minutes)
  4. Toss peppers into the pot with gnocchi
  5. In empty skillet, cook and crumble sausage 8-10 minutes
  6. Combine sausage, gnocchi, and peppers in skillet.
  7. Add pesto and whole milk, toss gently to coat all ingredients
  8. After heated through, toss pine nuts in with freshly grated Parmesan Cheese
