Chicken Tortilla soup is Delicious and Packed with Protein

It’s week 2 of the H-E-B Meal Maker Challenge with ConAgra Foods where I’ve been asked to share Kid Friendly Family Meals to make in under 30 minutes. In total, 5 recipes with 5 different ingredients to start with.  This weeks dinner is Chicken Tortilla Soup.  Full of protein, you will love this healthy and delicious tortilla soup recipe.

Chicken Tortilla Soup

This week our ingredient to use was Hunt’s Diced Tomato’s.  This is an ingredient that we always use when making one of our family favorites,  Chicken Tortilla Soup!  It so quick and easy to make and the texture with the crunchy tortilla strips is delicious. Chicken, diced tomatoes, and beans make up the base of this meal, which makes it hearty and filling as well.  You can add or take away any ingredients as desired, too. Disclosure: I received compensation for this contest, but the thoughts are all my own.

We make many variations of this meal at my home almost weekly, and the kids will often cheer when they hear about it. I love that sound!

I’ll eat this all year round, but a warm, hearty soup always sounds delicious on a chilly fall night–I long for that chill in the air;)  If you are in Texas, head to H-E-B, there is a coupon this week for the Hunt’s diced tomatoes!

    Thanks for sharing your recipe!

You’re welcome, it’s so simple and filling, Enjoy!!

  2. Chicken tortilla is my favorite. One of the reasons I bought a BlendTec!

    • Kristen Duke says:

I need a blendtec….you just pulse it into a juice?

      • Basically! You combine peppers, cheese, tomato and hat water and hit “soup.” It keeps it warm. At the end I add black beans and hit pulse once. Then I pour it in a bowl and add chips (and most likely more cheese).

        • Kristen Duke says:

Ahhh, interesting. I may need to take a closer look at that device!

          • Jessica H says:

It makes ice cream too! I will be posting a recipe soon!

  7. Melanie says:

Kristen the green chile in this recipe- is that chilies or a sauce?

    • Kristen Duke says:

It’s a sauce, so sorry, I need to edit that! It’s kinda like a salsa, but green and less chunky.

      • Melanie says:

So like a tomatillo sauce? I saw some like that at Target along with green enchilada sauce but figured that wasn’t what you used. It just wasn’t specifically called green chile sauce. What size jar did you use?

  8. Sounds like the perfect comfort food! Yum!

  9. Ever since we went to Mexico, I’ve been obsessed with Chicken Tortilla Soup! This looks awesome, Kristin! Totally craving a big bowl of warm soup now : )

  10. Linda says:

There is no water or chicken stock? What makes it “soup?”

    • Kristen Duke says:

THe liquid is in the canned beans;)

  11. What is that garnish? It looks almost like corn chips?

    • Did you make that yourself?

      • Kristen Duke says:

The tortilla strips–they are sold by the croutons and salad dressing in the grocery store.
