This Doritos Taco Salad meal may not be on the top 10 “healthy” list, but it’s hearty, quick, & easy with most ingredients that are kept on hand. My kids cheer when we have it, which always makes me smile. I also get pretty excited about this meal, reminds me of my childhood where corn was our main vegetable. I pretty much devour this meal when we eat it.

*I use this taco base (ground beef, black beans, bell pepper, seasoning, and sometimes corn) for a lot of my Mexican dishes: burritos, tacos, quesadillas, etc. Sometimes I'll substitute it with chicken, and even add kidney beans. I don't like onions, and see bell pepper as a great substitute that makes both my hubby and I happy.
