I am so delighted to share with you the recipe for my new favorite fall treat! These Pumpkin Spice Cake Mix Cookie Cups will not last long at your home, especially if you are like me and have a slight addiction to the Pumpkin Spice Hershey Kiss treats!
If you’ve seen or tried the Andes Mint Cookies made from a cake mix, it is a similar concept. I split the batch in half and left the kisses in tact for some, and then spread them out once melted on others. I liked the way they looked both ways, but preferred to bit into the spread out kiss version, once I let them sit in the fridge for a while. Have I mentioned I prefer most of my baked goods cold? Especially if there is any form of chocolate inside. This treat was no exception. I couldn’t stop myself from eating them!
I couldn’t get enough of how cute they looked, either, I took way too many pictures! I was pleasantly surprised that both my husband and oldest son also love them, but my younger kids haven’t warmed to the pumpkin spice flavor in ANYTHING! Boo-hoo.
Here is the simple recipe:

- 1 box yellow cake mix
- 1/2 cup oil
- 2 eggs
- 1 cup white chocolate chips
- 25 Pumpkin Spice Hershey Kisses

Mix cake mix, eggs, and oil together. Batter will be thick.

Stir in chocolate chips.

Drop by teaspoonfuls into mini muffin tin.

Bake at 350 degrees for 7 minutes. Remove cookies from oven and either place Kiss on top. When candy is softened, swirl gently with knife. Cool completely to set candy (put them in the fridge for quick setting).
I know, that was WAY too many pictures….but I just couldn’t part with them. I made these last week, now they are all gone. But I did just purchase a new bag of these kisses!
