This Doritos Taco Salad meal may not be on the top 10 “healthy” list, but it’s hearty, quick, & easy with most ingredients that are kept on hand. My kids cheer when we have it, which always makes me smile. I also get pretty excited about this meal, reminds me of my childhood where corn was our main vegetable. I pretty much devour this meal when we eat it.

Doritos Taco Salad
Base Ingredients
1 lb. ground beef, cooked
2 cans black beans, drained
2 cups frozen corn kernals
1/2 green bell pepper finely chopped
approx. 1 T. taco seasoning
Mix In
1/2 bag (as desired) nacho Doritos chips, crushed
1/2 cup shredded cheese
Toppings
1 avocado, sliced
dollop of sour cream
lettuce
tomatoes
more cheese
You can cook the beef/bean ratios as you’d like with more or less meat. This is the ratio I use for my family of 6. After the beef browns, add the black beans, bell pepper, and frozen corn (I prefer frozen, but you can use canned). Cook a few minutes until warm and bell pepper softens. Add taco seasoning to taste. Mix in the Doritos and cheese. Top with any toppings of your choice.
*I use this taco base (ground beef, black beans, bell pepper, seasoning, and sometimes corn) for a lot of my Mexican dishes: burritos, tacos, quesadillas, etc. Sometimes I’ll substitute it with chicken, and even add kidney beans. I don’t like onions, and see bell pepper as a great substitute that makes both my hubby and I happy.
