Strawberry season is upon us, and I am always on the lookout for fabulous strawberry dessert recipes. I found some leftover cream cheese and whipping cream in my fridge, and just knew I could come up with something fabulous to go with my berries. These Strawberry Shortcake Cookie Cups turned out even better than I imagined!
Strawberry Shortcake Cookie CupsHi, It’s Kara from Creations by Kara sharing today. I used my mom’s recipe for sugar cookies as the base, but you could totally use refrigerated sugar cookie dough to speed these up even more. You will probably have some dough left over if you go that route.

Strawberry Shortcake CupsThe filling for these cute little treats is simple, but it is seriously yummy! I could eat it by the spoonful. It’s not overly sweet, and it is a perfect compliment to the berries. I piped mine in, and I just used a frosting tip in the corner of a ziplock bag. But if you prefer, you can just spoon the filling into the cups. You want them to be really full, so use a good sized dollop.
Strawberries and Cream Cookie CupsAren’t they the prettiest little strawberry shortcakes you’ve ever seen? There’s something about mini foods that just make them fun to eat. Be careful though, you could pop a dozen of these in your mouth if you aren’t careful. They are that good!!

Strawberry Shortcake Cookie Cups
Servings: 32 cups

Ingredients
  • Dough:
  • 6 Tbsp butter softened
  • 1/2 cup sugar
  • 1 egg
  • 1/4 tsp almond extract
  • 1/2 tsp vanilla
  • 1 1/4 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • Filling:
  • 1/2 cup whipping cream
  • 2 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla
  • 1 cup strawberries diced
Instructions
  1. Cream butter and sugar in a mixing bowl till creamy. Add egg, almond extract, and vanilla. Beat well.
  2. Whisk together flour, baking powder, and salt. Add to creamed mixture and stir till well combined.
  3. Roll into 1" balls and place in well greased mini muffin pans. Make an indentation in the dough with your thumb or the back of a teaspoon.
  4. Bake at 350° for about 10 minutes, or till lightly browned on the edges. Use a spoon to press the dough down in the middle, forming a cup. Remove to cooling racks and cool completely.
  5. For filling:
  6. Beat whipping cream till stiff peaks form. Set aside.
  7. Beat cream cheese till smooth. Beat in powdered sugar and vanilla. Add whipped cream, and beat till well combined.
  8. Fill cups with filling. I piped it in, but you can just spoon it in if you prefer.
  9. Top with diced strawberries. Serve immediately or chill.
