The other day was my friends birthday, and I wanted to bake her a little treat. I thought I had all the ingredients to the simple (and my favorite) Andes Mint Cookies, but I didn’t have the Devils cake mix. I love how easy it is to make them with a cake mix. I thought….I can do that with another mix and some type of chips. I had a yellow cake mix, looked in my chip selection (I actually have quite a few options) and the cinnamon chips jumped out at me….yellow cake flavor with cinnamon….YUM! Thus was born the Cinnamon Chip Cake Batter Cookies.
I’m sure I’m not the first person to think of this idea, but I discovered it for myself, and it was very exciting! I felt like a true baker experimenting with ingredients and it worked out! I’d be REALLY annoyed if it didn’t work out. They were super chewy–just how I like my cookies!
I love looking at these pictures and seeing a few nicely shaped cookies and a few totally crazily shaped cookies–it’s just life around here. So here is the simple 4 ingredient recipe:
- 1/2 cup Oil
- 2 eggs
- 1 box yellow cake mix
- 1 cup cinnamon chips
- Mix together oil, eggs, and cake mix, then dump in the cinnamon chips. Bake on 350 for 7 minutes.
All of these ingredients were on hand, you can do this with any cake mix and chips!
