Easy Caprese Salad

I love a good salad all year long, and this Easy Caprese Salad brings me joy anytime. It really only has 3 main ingredients with 2 oils to mix as the dressing. Easy and delicious to throw together.

Heartburn Triggers and Treatment

I don’t know about you, but I’ve had heartburn issues in the past.  And foods like tomatoes can cause some people issues.  Some may look at this caprese salad recipe and run the other way because of the tomatoes.  Or maybe it’s another food that affects you? So along with this salad recipe, I’ll share a great trick for heartburn as well.

My heartburn issues started when I was pregnant. About 6 months into my first pregnancy-it didn’t matter what I ate, when I laid down at all I felt burning in my throat. I started sucking on antacids after meals.  And then all throughout the night. It felt kinda scary to fall asleep with a pill in my mouth, just to let me sleep!

With my second pregnancy, it was much worse.  I got a prescription medication, which was pricey.  And honestly, I’m not a fan of prescription meds unless they are necessary!

I don’t have daily heartburn now, but I do struggle with it intermittently. I’ve discovered the Kroger Omeprazole Orally Disintegrating Tablet (also referred to as ODT), which is more for frequent heartburn sufferers.  No pill to swallow and add to the heartburn struggles.

Do not take Omeprazole ODT for more than 14 days, or more frequently than every 4 months, unless directed by a doctor.

Caprese Salad

There are just 5 ingredients in this easy caprese salad.  The 3 main ingredients: baby tomatoes, mozzerella, and basil are mixed with the 2 ingredient dressing: olive oil & balsamic vinaigrette.

Caprese Salad
Ingredients
  • 2 packages mini tomatoes cut in half
  • 1 packaage mozzarella roll cubed
  • 1 head fresh basil chopped
  • 1 Tablespoon olive oil
  • 1 Tablespoon balsamic vinaigarette
Instructions
  1. Chop and Mix! Toss to taste.

Seriously, so easy. Totally worth taking care of the heartburn ahead of time.
