Meal Planning. I’ve got to do it, or I am stressed out every day. Who wants to willingly stress themselves out? I love the motto, “If you fail to plan, you plan to fail.” I’m determined to have good food each night, to not be stressed, and it all revolves around 30 or so minutes at the beginning of the week planning. It’s not easy, I’m a procrastinator, but it had to stop!

 

Family Meal Plan #4

Monday: Beef Stir Fry

Steak and veggies with a little brown rice. I bought the pre-cut steak, but it was a little tough. Did I buy the wrong meat? Cook it too long? I haven’t cooked steak much ever, so it’s a learning process. I also cut up orange, red, and yellow peppers. The kids didn’t care for that part as much, but my husband and I did! I’m trying to get them more acquainted with a variety of vegetables. Baby Steps.

Tuesday: Potato Ham Chowder

We used the leftover ham from last weeks meal plan. We had put it in the freezer. this chowder was scarfed up by the entire family and SO very easy to assemble in 30 minutes or less.

Wednesday: Enchiladas

Always a family favorite, love mixing black beans with the ground beef.

Thursday: Shrimp Pasta Salad

My husband grew up with a very simply shrimp pasta salad that I’d made in the past, but I wanted to spice it up. I added red pepper and celery based off of this recipe. It was delicious, but needed a little extra spices. Not sure what.

Friday: Leftovers!

Saturday: Honey and Pecan Glazed Salmon

I was very pleasantly surprised that my kids loved Salmon! They did well with the tilapia last week, so it made me very happy they liked the Salmon, too. We explained to them how good fish is for their brain development.

Sunday: Spaghetti

This spaghetti sauce from Lemons for Lulu is delicious! We used to have spaghetti once a week or at least every 10 days. I haven’t made it in over a month, as my husband was off of pasta completely. Now it’s coming back in, but just every once in a while. This is our quick, no-fail for the kids recipe.
