This Greek Quinoa Salad is full of flavor. The delicious hummus dressing, crunchy green veggies, and kalamata olives offer a healthy salad that tastes delicious.
about 10 years ago, when I would go out to dinner with other ladies, I would order a burger and fries and everyone else would order a salad. I didn’t get it! I enjoyed my burger and didn’t feel bad about it at all. Fast forward 5 years to when I got serious about eating healthy, and I started ordering those salads as well. At first I was surprised that I actually liked those salads. Knowing they are good for me helped, but a lot of them were full of flavor. Now I am always on the hunt for unique and delicious salads wherever I go.
Recently, for my weekly salad swap, a friend of mine brought what looked like a pretty plain salad. Each week, I take a peek of the 3 mystery salads that come my way, and I saved this particular salad for last. I saw the quinoa and some green leaves, but didn’t notice much else. It wasn’t until I stirred in the hummus dressing made from hummus and olive oil that I thought it might be bearable.
Little did I know, I was about to partake of the most flavorful mediterranean salad I’d ever tasted.
I’m pretty sure this salad is my new best friend. I savored every bite. And I didn’t want it to end.
Half way through my salad consumption, I texted my friend that shared it, needing to know every detail about what made this greek quinoa salad unique. From the outside, it didn’t seem like much. Just green leaves, quinoa, and a few other veggies. But the combination of all of the flavors, including the kalamata olives, truly rocked my world. I’d only ever had black olives before, and they weren’t my favorite. But kalamata olives were delicious.
My friend said she got the recipe from Our Best Bites, to which I thought…oh, my friends Sara and Kate, fun! That will be easy, I’ll go PIN that recipe and save it for later. But when I clicked over and saw the Wendy’s Copycat, it looked nothing like their salad! I mean, I am PRETTY SURE that salad is amazing, but this salad that I was eating looked different and I wanted to know exactly how.
My friend Janene was likely annoyed with my incessant questions after providing me the link.
She said, “I just changed a few things…used red quinoa, boiled egg instead of chicken, red tomatoes, no onions, kalamata olives, and Zoes Kitchen Greek dressing (that I heard is also sitting on the tables at the restaurant).”
What?!? I thought…that sounds a LOT different!

I love a hearty salad, so I added red bell peppers and cucumber as well.

Greek Quinoa Salad and Hummus Dressing Recipe
Most salads don’t necessarily have a RECIPE per se, and with this one, you just toss in the leaves, and add in the toppings according to your tastes.
- dark green lettuce

- Plain Hummus
- chick peas
- red quinoa, cooked
- boiled egg
- grilled chicken
- sliced bell pepper
- feta cheese tossed on top
- chopped cucumber
