Lemon Pudding Orange Jello Salad recipe

My sister-in-law Alayna introduced me to this delicious orange jello salad years ago at a Thanksgiving dinner gathering. I fell in love, hard, and made it once right after, than forgot about it. When she joinined us for Easter dinner, I somehow had a remembrance vision of this jello salad and asked her to help me make it, and now I’m here to share it with all of you, my friends.

I looked online to see if there was anything similar, and there WAS, but it wasn’t the recipe she made. Some call it a jello dessert, others a Jell-o salad, then the confusion between Dreamsicle orange jello and Creamsicle orange jello…what is it called? You know, the popsicle from the 80’s that was orange but filled with creamy vanilla ice cream on the inside?

I don’t even know, all I DO know is that this orange jello salad has a delicious lemon pudding mixture on top, and the unique orange jello on the bottom is mixed with lemon pudding, but it can’t be instant lemon pudding, it has to be the COOK & SERVE lemon pudding. You got that? So when you buy the Jell-o at the store, grab 3 different kinds of Jell-o:

  1. Orange Jello
  2. Lemon Cook & Serve pudding
  3. Lemon Instant pudding

I quizzed Alayna and asked why I can’t just go the easy route and use the INSTANT lemon pudding for both.  She says they have a different consistency. The cook and serve lemon pudding produces more of a custard type pudding, it’s thicker, and meshes with the orange jello best. You combine the two for the most creamy amazing texture once it chills together. Trust me on this one.

I’m just going to go with believing her because I don’t want to mess this delight of a desert up. Oh wait…salad…not dessert, right.

On the top layer, you mix the instant lemon pudding with Cool Whip and some powdered sugar and that is it!  Pure deliciousness.

Do you see how the above orange jello is a different creamsicle-like coloring because the lemon pudding is mixed in? Once you’ve got that all spread, chill a bit more.  Then add your mandarin oranges to the top once it’s ready to serve.

This creamy salad might also be called a dessert. Topped with lemon pudding, sure to delight family and friends alike.

Ingredients
  • 1 large box orange jello
  • 1 large box Lemon Cook & Serve pudding
  • 1 large box lemon instant pudding
  • 3 egg yolks
  • 3/4 cup sugar
  • 1/2 cup milk
  • 8 oz. Cool Whip or whipping cream
  • 1/4 cup powdered sugar
  • 1 can Mandarin Oranges
Instructions
  1. Make Orange Jello according to package directions. Cook & Chill for next step.

  2. Lemon Cook & Serve lemon pudding according to package directions. (Cook fully)

  3. Combine orange and lemon pudding together until smooth

  4. Pour into a 9x13” pan. Let set 4+ hours.

  5. For topping, combine Lemon instant pudding with milk, powdered sugar, fold in cool whip. 

  6. Spread over orange/lemon set jello.

  7. Top with mandarin oranges.

Extra tip: You actually have to cook the lemon pudding. The easiest way is to do it is The microwave for two minute intervals stirring in between, but you can do the stovetop method too, you just have to stand and stir for about twenty minutes. Then you add the cooked pudding to the jello that’s been cooling. Blend together well and pour in your dish to set up.

I encourage you to add the ingredients for this orange jello salad recipe to your shopping list.  And try it ASAP!  If you like jello at all, you will not be disappointed. I like it OK, but I LOVE this! So much of a better texture than just jell-o alone.
