Baked Corn Flake Chicken

I can’t even tell you how excited my kids were at the deliciousness of this meal! I’m always wanting kid-friendly and quick meals, and this fits into both categories. After my 13 year old (growing, eating me out of house and home) son took a bite of one piece of chicken, he hoarded 5 more pieces onto his plate to ensure he’d get enough.  With how active they are with sports and school and everything, I want to make sure they are eating right. Especially on game days, they need a good, hearty meal after exercising.   Baked Corn Flake Chicken I think I’ve shared before that my husband has been the soccer coach to both of my boys (on the same team). In spring and fall, our Thursday nights are about scarfing a meal, and they run out the door. My girl and I like to cheer all 3 of them on each week on game day, with a family, too. Sports and eating good protein go hand in hand, and this meal has just that. You can use chicken tenders, but I used chicken breasts and cut them into smaller strips. I used 4 large breasts to feed my family of 6. I looked all over online for a recipe using Kellogg’s Corn Flakes and chicken, and found this Crispy Corn Flake Chicken and then this Corn Flakes Tender Strips and used bits of both.  Here is how I ended up making my Baked Corn Flake Chicken.

Baked Corn Flake Chicken

A hearty dinner your kids will love!

 

Ingredients

 

    • 4-5 large chicken breasts, sliced to pieces

 

  • 1 tsp. garlic (I use garlic salt)

 

 

  • salt and pepper

 

 

  • 3 cups Kellogg’s corn flakes, crushed

 

 

  • 1 cup flour

 

 

  • 1 cup buttermilk

 

 

  • honey mustard or ketchup to dip

 

 

 

Instructions

 

    1. Preheat oven to 350

 

  • Mix garlic, salt, and pepper in a bag/bowl with uncooked chicken and toss.

 

 

  • Let sit for 10 minutes or more as marinade.

 

 

  • In another bag/bowl, crush Kellogg’s corn flakes.

 

 

  • In a shallow bowl mix flour, salt, & pepper.

 

 

  • In another shallow bowl add buttermilk.

 

 

  • Dunk the chicken in flour and then in buttermilk.

 

 

  • Place the chicken in the bag and coat well.

 

 

  • Bake 30-40 minutes until chicken is cooked through.

 

 

  • Dip with honey mustard or ketchup if desired.
