Summer is prime ice cream time! Break out the ice cream maker and get ready to impress your family and friends with this sweet and tart blend of key lime pie ice cream. The lime flavor is concentrated to give your taste buds a surprise. Just drizzle in the lime syrup and layer with the buttery, crunchy graham cracker pie crust for the perfect summer time dessert! This recipe has three parts, but don’t worry. Each part is easy and only takes a few minutes.
Key Lime Pie Ice Cream Recipe
- 1/4 cup lime juice
- 1/2 cup granulated sugar
- 2 Tbsp corn starch
- 1 cup graham cracker crumbs
- 1 Tbps granulated sugar
- 1/4 tsp cinnamon ground
- 5 Tbsp butter melted
- 3/4 cup granulated sugar
- 1 cup whole milk
- 2 cups heavy whipping cream
In a small sauce pan, mix the corn starch with the sugar before turning on the heat.
Turn the heat to medium, add the lime juice, and stir with the whisk until smooth.
Stirring constantly, heat until the mixture starts to boil.
Boil for about 2 minutes, then remove from the heat. Allow to cool completely.
Mix all ingredients together and press in the bottom of an 8x8 pan.
Bake at 350 degrees for 10-15 minutes, until lightly brown.
Cool completely and then break into bite sized pieces.
In a medium-sized bowl, stir the sugar and milk with a wire whisk until sugar has dissolved.
Add heavy whipping cream and mix well.
Pour into your ice cream maker and follow the manufacturer’s directions.
Once frozen, transfer to an airtight container, layering the lime syrup and pie crust into the ice cream.
