This lime cheesecake ice cream recipe will surely be a big hit this summer! The graham cracker crust, and delicious cream will simply melt in your mouth.


Summer is prime ice cream time! Break out the ice cream maker and get ready to impress your family and friends with this sweet and tart blend of lime and cheesecake! The lime flavor is concentrated to give your taste buds a surprise. Just drizzle in the lime syrup and layer with the buttery, crunchy cheesecake crust for the perfect summer time dessert! This recipe has three parts, but don’t worry. Each part is easy and only takes a few minutes.

If you’ve never made ice cream before or you have an old, clunky, hand-cranked ice cream maker that requires salt and ice, fret no more! Help is at hand! Ice cream makers nowadays are so easy to use! Ingredients and Directions:

For the cheesecake crust:

  • 1 cup graham cracker crumbs
  • 1 Tbsp. granulated sugar
  • 1/4 tsp. ground cinnamon
  • 5 Tbsp. butter, melted

Mix all ingredients together and press in the bottom of an 8×8 pan. Bake at 350 degrees for 10-15 minutes, until lightly browned. Cool completely, then break into bite-sized pieces

For the lime syrup:

  • 1/4 cup lime juice
  • 1/2 cup granulated sugar
  • 2 Tbsp. corn starch

In a small saucepan, mix the corn starch with the sugar before turning on the heat. Add the lime juice, turn the heat onto medium, and stir with a wire whisk until smooth. Heat to a boil, stirring constantly. Boil for about two minutes, then remove from heat. The syrup may not be very thick, but that is o.k. Cool completely before adding to the ice cream.

For the ice cream:

  • 3/4 cup granulated sugar
  • 1 cup whole milk (do not use lowfat!)
  • 2 cups heavy whipping cream

In a medium-sized bowl, stir the sugar and milk with a wire whisk until sugar has dissolved. Add heavy whipping cream and mix well. Pour into your ice cream maker and follow the manufacturer’s directions. When transferring to an airtight container, layer with lime syrup and cheesecake crust.

Note: You may not use all the lime syrup or cheesecake crust. Just add as much of each as you like to your ice cream.
