I don’t know about all of you, but I don’t have a problem consuming fruit. So when I challenged myself to a smoothie a day in January, it was all about the greens. I NEED more green in my life! This Strawberry Green Smoothie Recipe is a great way to throw in some fruit, some green, and blend it on up!
I’ve been doing some investigating, and though a lot of people like to add in protein powder, I like to keep mine more to fresh ingredients. I get the protein from the yogurt, and creaminess from almond milk and avocado. Have you tried an avocado in your smoothie?? YUM! I also love the flavor of coconut oil.
If your kids are like mine, they often turn up their noses as the green stuff, but if I let them know it’s packed with strawberries, and ask them to give it a chance, they comply fairly well, and get over their initial thoughts.
Ingredients
- 1 cup almond milk
- 1 cup water
- 1 cup fresh spinach
- 1/2 avocado
- 1/2 plain yogurt
- 1 cup strawberries (ideally frozen)
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
Blend spinach and almond milk first, til smooth. Add in avocado, strawberries, coconut oil, vanilla, cinnamon. If you have fresh strawberries, add in 5-7 pieces of ice to desired consitancy.
Makes 2 smoothies (one for now, freeze for later)
