I love the little bursts of delicious I get from protein bites, and I’m excited to share a version of a recipe recently introduced me to. A great healthy snack for after workouts, or just for a boost of energy during the day.
A few weeks ago, my friend Shelley and I did a Saturday gym workout together. After, we stopped by our local Sprouts to grab a few things, and on her list were dates. I’d never bought dates before. I had heard that people like them, and use them in granola and such, but I didn’t realize that they look like giant raisons…or bugs. I figured I’d buy a package, and make the protein bites she was telling me about, too. I used her recipe for my first batch, but I thought the second batch could be a bit different, so this is MY spin on them.
The first batch I made, I used peanut butter, then the second time, I used almond butter I made from my grocery store (literally JUST almonds ground up, nothing else). I added honey to the almond butter for extra flavor. You can omit the honey if doing peanut butter, but I believe one can never have too much honey. A great natural flavoring, and my husband swears that local honey has alleviated his allergens.

Ok, here is the super simple recipe:
- 15 medjool dates pitted
- 1 cup dry rolled oats
- 5 T almond or peanut butter
- 2 scoops vanilla protein powder
- 1/2 tsp salt
- 2 tsp cinnamon
- 2 T honey
- After cutting out the pits on the dates, throw everything into a blender.
- Roll into balls.
- Refrigerate.
- Yes, it's THAT easy!
