I need more easy recipes in my life. I’ll take any shortcuts I can get, and to make this no bake pumpkin cheesecake, I put together a unique crust with Entenmann’s® Little Bites® Pumpkin Muffins. They are baked soft and moist using real pumpkins, with just 180 calories per pouch, and never contain high fructose corn syrup or trans-fat.
Aside from setting out the cream cheese to soften, this pumpkin cheesecake came together in about 10 minutes.
Tips for making No Bake Pumpkin Cheesecake:
- Dish sizes vary, but it doesn’t matter what it looks like on the bottom, it will be covered!
- When spreading the pumpkin cheesecake mixture, dollop the entire amount on the muffins and spread from there (see below), easier to not have the muffins turn or crumble.
- Do the same dollop with the whipping cream, so you’ll have a nice white mixture on top.
- Make your own whipping cream or purchase a pre-made tub at the store.
- Fun and easy to make with the kids!
My kids don’t always like things that are “against the norm” they are not the experimental type. However, I was delighted when I pulled this out,and they literally DUG IN! After it chilled, we were able to cut through it in nice pie slices. I love the below shot of my daughter holding it up, seeing the underside of the pie. I kinda like this underside view.

No Bake Pumpkin Cheesecake Recipe
The quick an easy way to make a pumpkin treat!
- 2 boxes Entenmann’s® Little Bites® Pumpkin Muffins (1 box for crust, 1 box optional for topping)
- 1 8 oz. pkg. cream cheese, softened
- 1/2 can pure pumpkin (about 1 cup)
- 3/4 cup powdered sugar
- 1 tsp pumpkin pie spice
- 1 tsp vanilla
- 2 cups whipped cream
Line muffins on the bottom of pie dish
Mix cream cheese, pumpkin, sugar, spice, and vanilla in mixer
Spread over muffins
Top with whipped cream
Decorate top of pie with sliced up muffins
Chill 2-3 hours or overnight
